Bulgur Pilaf with Tomato Paste
A wholesome and traditional dish prepared with CEREN’s finest ingredients.
Ingredients
- 2 cups CEREN Bulgur (coarse or medium-grain)
- 1 medium onion, finely chopped
- 2 tablespoons CEREN Tomato Paste
- 2 tablespoons olive oil or butter
- 3 cups hot chicken or vegetable stock (or water)
- 1 medium green pepper, chopped (optional)
- 1 medium tomato, diced (optional, for extra freshness)
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the base: In a medium pot, heat the olive oil or butter. Add the chopped onion and sauté until golden.
- Add flavor: Stir in the CEREN Tomato Paste and cook for 1–2 minutes to release its rich aroma. If using peppers or tomato, add them at this stage.
- Add bulgur: Rinse the CEREN Bulgur under cold water, then add it to the pot. Stir well to coat each grain with the tomato-onion mixture.
- Simmer: Pour in the hot stock (or water). Season with salt and black pepper. Stir once, bring to a boil, then reduce the heat to low.
- Cook: Cover and simmer for about 15–18 minutes, until the bulgur absorbs the liquid.
- Rest and serve: Remove from heat and let the pilaf rest, covered, for 5 minutes. Fluff gently with a fork before serving.
